Cinco de mayo

Whoa Whoa, sorry kids it has been a long stinkin time since I blogged, Whoops! I have been a busy girl. Our weekends have been jam packed lately and that has been great and everytime I think about posting I am at work bored between hands on times for the babies and can't do it. Soooo sorry for the belated post but here is what we did for cinco de mayo!


My amazing friends Audra and Ali came to town from manhattan and topeka to run in the warrior dash. It's a 5k race with tons of obstacles and so they came up friday night and ran saturday morning. The had great times and got really muddy and sunburned even though I sprayed them with sunblock. I packed them a cooler the way that a cool mom does with fruit cups and protein bars and water bottles and sunscreen and towels to sit on in the car on the way home because I knew theyd get dirty....rediculous I know. It's my maternal side taking over.
Just laughin at each other like old times.

While they were gone I went to the store and got everything for a mexican feast!
The Menu

Chicken and cheese quesadillas

The food was awesome not to give myself too much credit and in case everyone else wants to know...here is my guacamole recipe...to die for

Target Semi-Homemade Guac
  • Gather avacados, from your tropical backyard or in my case...super target (make sure they are nice and ripe, they will have a dark skin, almost black and when you give them a gentle squeeze they squish in a little. Firm avacados are not ready and just wont do)




  • Cut avacados in half with a sharp knife, cut down the center and then turn the avacado so you cut through to the pit and all the way around the edge, twist the two halves and pull apart. You will get something like this.
  • Act like a samari warrior and take said sharp knife and slam it (carefully) into the pit and the pit will stick to the knife when you pull the knife out, you may have to give the pit a little twist to get it to come loose from the half.

  • Take your trusty avacado tool that I HAD TO HAVE for $5 at bed, bath and beyond and scrape out the inside of the avacado, a spoon will do as well.
  • Mash avacado with a fork, leave as many or little chunks of avacado as you want


  • Stir in this to die for guacamole seasoning packet that I found right next to the avacados at target.

  • (if you like more of the chunky real deal business, mix chopped up tomatoe, jalapeno, onion, garlic and lime juice with your avacados)
  • Top it off with some lemon or lime juice and stir in.. Serve with these gluten free on the border chips that Taylor thinks are god's gift to earth

My cousin came over too and then we went to Kanza Hall. A new country bar with terrible music. lol
